Dalla scienza del fare – tecnologia – che studia l’aspetto materialistico della preparazione del cibo, si attraversano campi come l’antropologia e la nutrizione, per arrivare all’analisi sensoriale che si interessa di un aspetto fisiologico-psicologico-culturale più intellettuale, intriso di valori estetici legati al consumo, un equilibrio tra necessità e piacere. Il cibo, con la preparazione, il consumo, la conservazione, diventa per l’emigrante un ‘bagaglio’ rifugio, un insostituibile compagno e strumento di consolazione e aggregazione.
The Unexpected Influence of the European-Latin American Encounter on Food Cultivation, Preservation and Preparation
This essay combines the science of technology, which studies the material aspects of food preparation, with anthropology, nutrition and sensory analysis, which focuses on the physiological-psychological-cultural aspect – a more intellectual aspect linked with the aesthetic values of consumption that ensures a balance between necessity and pleasure. For migrants, the preparation, consumption and preservation of food becomes a shelter, an irreplaceable travel-mate and a tool for aggregation and consolation.
